Ingredients

Scale

Seafood

  • 4 thick, boneless fresh salmon fillets
  • 8 oz raw shrimp, peeled and deveined

Filling

  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup breadcrumbs (or gluten-free breadcrumbs/ crushed almonds for gluten-free option)
  • 1/4 cup grated Parmesan cheese (or Asiago / Pecorino Romano)
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Black pepper, to taste

For Cooking & Serving

  • 2 tablespoons olive oil
  • Fresh lemon wedges (for garnish)
  • Additional chopped parsley or chives (for garnish)

Instructions

  1. Prepare the Shrimp Filling: Finely chop the raw shrimp. In a skillet, sauté the chopped shrimp with minced garlic in olive oil over medium heat until just cooked through. Remove from heat and mix in the breadcrumbs, grated Parmesan, chopped parsley, lemon zest, salt, and pepper until well combined to create a cohesive stuffing.
  2. Prep the Salmon Fillets: Carefully slice lengthwise through the center of each salmon fillet to create a pocket, being careful not to cut all the way through. Pat the fillets dry thoroughly and season lightly with salt and pepper inside and out.
  3. Stuff the Fillets: Fill each salmon pocket with the prepared shrimp stuffing, pressing gently so the filling stays intact without overflowing.
  4. Cook to Perfection: Place the stuffed salmon fillets in a greased baking dish. Drizzle olive oil over the fillets and bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until salmon is cooked through and flakes easily.
  5. Final Touches: Optionally, broil the stuffed fillets for 2 minutes to achieve a golden, bubbly top. Finish by squeezing fresh lemon juice over the salmon before serving.

Notes

  • Choose thick salmon fillets for better stuffing support and moist cooking.
  • Do not overfill the salmon pockets to ensure even cooking.
  • Pat the salmon dry before seasoning to improve texture and flavor adherence.
  • Use fresh herbs like parsley or dill for enhanced flavor.
  • Check salmon doneness carefully to avoid dryness; a slightly translucent center is ideal.
  • For a spicy twist, add red pepper flakes or cayenne to the stuffing.
  • Swap Parmesan for cream cheese or feta for creamier texture and tang.
  • To make gluten-free, replace breadcrumbs with crushed almonds or gluten-free panko.
  • Add finely chopped spinach or bell peppers into the stuffing for extra nutrients and color.
