Soy Garlic Chicken Thighs

Soy Garlic Chicken Thighs are a quick and easy dish delivering juicy, tender chicken thighs coated in a savory, garlicky soy glaze that perfectly balances sweet and salty flavors. Ready in under 30 minutes, this recipe uses simple pantry staples to bring a rich flavor profile and versatile main course option that can be served on its own, over rice, or in salads.

Ingredients

Scale

Chicken

  • 1.5 lbs boneless chicken thighs

Marinade & Glaze

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 3 garlic cloves, minced
  • 2 tablespoons honey or brown sugar
  • 1 teaspoon sesame oil

Garnish & Seasoning

  • 2 green onions, chopped
  • Black pepper, to taste

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine soy sauce, minced garlic, honey or brown sugar, and a teaspoon of sesame oil. Whisk these together until the sugar dissolves and the mixture is smooth and fragrant.
  2. Marinate the Chicken: Add the chicken thighs to the bowl, making sure each piece is coated generously. Let it marinate for at least 15 minutes — or up to an hour if you have time — to let the flavors fully infuse.
  3. Cook the Chicken: Heat a skillet over medium heat with a drizzle of oil. Remove the chicken from the marinade (reserve the liquid) and place in the pan skin side down if using skin-on thighs. Cook for about 6-7 minutes on each side until the chicken is cooked through and caramelized.
  4. Glaze the Chicken: Add the reserved marinade to the pan and let it simmer for a few minutes. This thickens the sauce and coats the chicken with a glossy, flavorful glaze.
  5. Garnish and Serve: Once the glaze thickens, remove the pan from heat. Sprinkle chopped green onions and a pinch of black pepper over the chicken before serving.

Notes

  • Pat Dry Chicken: Dry the chicken with paper towels before marinating to help it crisp up better.
  • Don’t Overcrowd the Pan: Leave space between pieces for even cooking and caramelization.
  • Use Medium Heat: Prevent burning the garlic and sugar by maintaining medium heat during cooking.
  • Let it Rest: Allow the chicken to rest a few minutes after cooking for juicy results.
  • Reserve Marinade: Always save some marinade to turn into the glaze; don’t pour it away.
