Instructions

  1. Prepare Your Ingredients: Finely dice the onions and mince the garlic. If using fresh chili peppers, finely chop them as well. Crack the eggs into a bowl and lightly whisk to combine the whites and yolks evenly.
  2. Sauté Aromatics: Heat butter or oil in a non-stick skillet over medium heat. Add the onions and sauté until translucent and slightly golden, about 3–4 minutes. Stir in garlic and chopped chili peppers, then cook for another 1–2 minutes until fragrant and softened.
  3. Add Spices: Sprinkle in the chili powder along with a pinch of salt and pepper. Stir well to coat the aromatics evenly and release the spices’ flavors, cooking for about 30 seconds to a minute.
  4. Cook the Eggs: Pour the whisked eggs into the skillet. Allow them to cook undisturbed for about 10 seconds, then gently scramble by folding the eggs with a spatula. Continue until the eggs are softly set but still moist for a creamy texture.
