Spinach and Mushroom Alfredo Ravioli

Spinach and Mushroom Alfredo Ravioli is a creamy and savory Italian dish featuring tender pasta pockets filled with earthy mushrooms and fresh spinach, all coated in a rich Alfredo sauce. Perfect for comforting weeknight dinners or special occasions, this recipe provides a harmonious blend of flavors and textures with a fresh, vibrant twist on traditional ravioli.

Ingredients

Scale

Ravioli

  • Fresh or store-bought ravioli (about 12-16 oz)

Vegetables

  • 2 cups fresh spinach, roughly chopped
  • 1 cup sliced mushrooms (cremini or white button)

Sauce

  • 1 cup heavy cream or half-and-half
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 2 garlic cloves, minced

Additional Ingredients

  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the mushrooms and spinach: Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until golden and their moisture is released, about 5–7 minutes. Add fresh spinach and cook until just wilted, stirring occasionally. Remove from heat and set aside.
  2. Cook the ravioli: Bring a large pot of salted water to a boil. Gently add ravioli and cook according to package instructions, usually 3–4 minutes, until they float to the surface. Drain carefully, reserving a small cup of pasta water.
  3. Make the Alfredo sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and the sauce thickens slightly, about 3–5 minutes. Season with salt and pepper to taste.
  4. Combine everything: Return sautéed mushrooms and spinach to the skillet with the Alfredo sauce. Add the cooked ravioli and gently toss to combine. If the sauce is too thick, add reserved pasta water one tablespoon at a time until the desired consistency is reached.
  5. Serve and enjoy: Plate the ravioli immediately, optionally garnishing with extra Parmesan cheese and fresh herbs such as parsley or basil. Serve warm for best flavor and texture.

Notes

  • Use fresh or high-quality refrigerated ravioli for the best texture and flavor.
  • Don’t overcook mushrooms to keep their umami flavor intact.
  • Simmer the sauce on low heat to avoid curdling of the cream.
  • Reserve pasta water to adjust the thickness of the sauce and enhance creaminess.
  • Freshly grate Parmesan cheese for richer taste and better melting.
  • For protein boost, add grilled chicken or shrimp.
  • For vegan version, substitute cream with cashew cream and use vegan cheese alternatives.
  • Try different mushrooms like shiitake, portobello, or oyster for varied flavors.
  • Add red pepper flakes or cayenne for heat.
  • Enhance flavor with fresh herbs such as basil, thyme, or parsley.
  • Store sauce and ravioli separately to preserve texture and flavor when refrigerating leftovers.
