Instructions

  1. Prepare the Chicken and Vegetables: Dice the chicken breasts into bite-sized pieces. Heat olive oil in a large skillet over medium heat and sauté the onion and garlic until fragrant and translucent. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes.
  2. Combine Spinach and Artichokes: Add the fresh spinach and chopped artichoke hearts to the skillet. Cook for an additional 2-3 minutes until the spinach wilts and the artichokes soften slightly, maintaining their tanginess.
  3. Mix Creamy Sauce and Orzo: Stir in the cream cheese, chicken broth, Italian seasoning, salt, and pepper. Allow the cream cheese to melt completely, creating a rich and creamy sauce. Add the uncooked orzo and mix well until evenly coated and combined.
