Filling Ingredients

  • 1 cup canned or jarred artichoke hearts, drained and chopped
  • 2 cups fresh spinach
  • 8 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Bread Bowl

  • 1 round loaf sourdough or any dense crusty bread

Optional for Cooking

  • 1 tablespoon olive oil (for sautéing garlic and spinach)

Instructions

  1. Prepare the Bread Bowl: Slice off the top of the bread loaf and hollow out the inside, leaving about a 1-inch thick wall to create a bowl that will hold the filling while providing bread to scoop up the dip.
  2. Cook the Spinach and Garlic: In a skillet over medium heat, sauté the minced garlic in olive oil until fragrant. Add the fresh spinach and cook just until wilted. Drain any excess liquid thoroughly to prevent the filling from being watery.
  3. Mix the Filling: In a bowl, combine the softened cream cheese, mayonnaise, shredded mozzarella, grated Parmesan, chopped artichoke hearts, and cooked spinach. Season with salt and pepper, then stir until well blended and creamy.
  4. Stuff the Bread Bowl: Fill the hollowed bread bowl tightly with the creamy spinach and artichoke mixture, ensuring to pack it in to every corner for maximum flavor.
  5. Bake Until Golden and Bubbling: Place the stuffed bread bowl on a baking sheet and bake in a preheated oven at 375°F (190°C) for 25-30 minutes or until the cheese is melted, bubbly, and the top is golden brown.

Notes

  • Drain thoroughly: Squeeze excess moisture from spinach and artichokes to avoid sogginess.
  • Use sturdy bread: Dense breads like sourdough hold the filling well and prevent leaks.
  • Room temperature cheeses: Soften cream cheese and mayonnaise before mixing for a smooth filling.
  • Don’t overbake: Bake until just golden to keep bread crisp without drying it out.
  • Serve warm: Best enjoyed fresh from the oven while gooey and hot.
