Spinach Corn Sandwich

The Spinach Corn Sandwich is a wholesome and flavorful snack combining fresh spinach, sweet corn kernels, and a blend of savory seasonings between soft bread slices. Quick to prepare and versatile, this sandwich is perfect for breakfast, lunch, or an anytime snack, offering a nutritious, tasty, and satisfying bite.

Ingredients

Main Ingredients

  • Fresh Spinach – 1 cup, washed and finely chopped
  • Sweet Corn Kernels – 1/2 cup (fresh or canned, drained)
  • Bread Slices – 2 (white, whole wheat, or gluten-free as preferred)

Seasonings and Flavorings

  • Green Chilies – 1 small, finely chopped (adjust to taste)
  • Garlic – 1 clove, finely chopped
  • Onion – 1 small, finely chopped
  • Salt – 1/4 tsp or to taste
  • Black Pepper – 1/8 tsp or to taste
  • Lemon Juice – 1 tsp, freshly squeezed

For Cooking

  • Butter or Oil – 1 tbsp (plant-based oil for vegan option)

Instructions

  1. Prepare the Filling: Sauté finely chopped garlic and onions in a little oil over medium heat until fragrant and translucent. Add the chopped green chilies and stir briefly. Toss in the chopped spinach and cook for a few minutes until the spinach wilts but remains vibrant green.
  2. Add Corn and Season: Stir in the sweet corn kernels, salt, pepper, and a splash of lemon juice. Mix gently until the mixture is heated through and well combined. Remove from heat and set aside to cool slightly before assembling.
  3. Assemble the Sandwich: Take two slices of bread and spread the spinach corn filling evenly over one slice. Place the second slice on top to form the sandwich.
  4. Toast Until Golden: Heat a pan or griddle over medium heat and melt butter or oil. Grill the sandwich on both sides until the bread is crispy and golden brown, pressing gently to keep the filling intact.
  5. Serve Hot and Enjoy: Cut the toasted sandwich into halves or quarters and serve immediately for the best taste and texture.

Notes

  • Drain corn well if using canned to prevent soggy filling.
  • Chop spinach finely for even distribution and easy biting.
  • Use fresh bread for better crispiness; day-old bread may not toast well.
  • Adjust the salt, pepper, and chili to suit your taste before assembling.
  • Press sandwich gently while grilling to maintain crunch without flattening.
