Ingredients

Scale

Beef

  • 300g thinly sliced flank steak or sirloin
  • 1 tbsp soy sauce (for marinating)
  • 1/2 tsp brown sugar (for marinating)
  • 1 tsp cornstarch (for marinating)

Noodles

  • 200g fresh egg noodles or dried wheat noodles
  • 1 tsp sesame oil (for tossing noodles)

Sauce

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 50 ml water or broth
  • 1 tsp cornstarch mixed with 2 tbsp water (cornstarch slurry)

Aromatics

  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated

Optional Vegetables

  • 1/2 cup sliced bell peppers, snap peas, or other crunchy vegetables

Finishing

  • 1 tsp sesame oil (for drizzling before serving)

Instructions

  1. Prepare the Beef: Thinly slice the beef against the grain. Marinate briefly in a bowl with soy sauce, brown sugar, and cornstarch. Set aside to tenderize and season.
  2. Cook the Noodles: Boil noodles according to package instructions until al dente. Drain and toss with sesame oil to prevent sticking and add flavor.
  3. Stir-Fry Aromatics: Heat oil in a wok or large skillet over high heat. Add the minced garlic and grated ginger, cooking just until fragrant but not browned to build the flavor base.
  4. Cook the Beef: Add the marinated beef to the hot pan. Stir-fry quickly until browned on the outside but still juicy inside, about 2-3 minutes.
  5. Combine Sauce Ingredients: Mix soy sauce, oyster sauce, brown sugar, and water or broth. Pour the sauce over the beef and add the cornstarch slurry. Let the sauce bubble and thicken to a sticky consistency.
  6. Toss Noodles and Vegetables: Add the cooked noodles and optional vegetables to the pan. Toss everything together over medium heat so the noodles absorb the sauce evenly and everything is coated.
  7. Final Touch: Just before serving, drizzle with sesame oil for added aroma and richness. Toss lightly and serve immediately.

Notes

  • Slice the beef thin and evenly to ensure quick cooking and tenderness.
  • Undercook noodles slightly to avoid mushiness after stir-frying.
  • Adjust the amount of cornstarch slurry gradually to achieve desired sauce thickness.
  • Use high heat during stir-frying to lock in flavors and get proper texture.
  • Let noodles rest off the heat for a minute to allow the sauce to thicken further.
