Ingredients

Scale

Main Ingredients

  • 1 cup glutinous rice (sticky rice)
  • 2 ripe mangoes (preferably Ataulfo or Alphonso)
  • 1 cup coconut milk
  • 1/2 cup granulated sugar
  • Pinch of salt

Optional Garnishes

  • Toasted sesame seeds or toasted mung beans
  • Roasted peanuts or coconut flakes (optional for added crunch)
  • Melted dark chocolate (optional for drizzle)

Instructions

  1. Soak the Sticky Rice: Rinse 1 cup of glutinous rice thoroughly in cold water until the water runs clear. Soak the rice in fresh water for at least 4 hours or overnight to ensure even cooking and sticky texture.
  2. Steam the Rice: Drain the soaked rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam over boiling water for 20-25 minutes, stirring halfway through. The rice should be tender and sticky when done.
  3. Prepare the Coconut Sauce: Gently heat 1 cup coconut milk in a saucepan over low heat. Add 1/2 cup sugar and a pinch of salt, stirring until completely dissolved. Avoid boiling; just warm enough to blend the flavors.
  4. Combine Rice and Coconut Sauce: Transfer the steamed rice to a bowl and pour most of the coconut milk mixture over the hot rice. Stir gently and cover the bowl with a lid or plastic wrap. Let it absorb the coconut sauce for about 20 minutes to achieve a creamy texture.
  5. Slice the Mango and Serve: Peel and slice the ripe mangoes into thin, elegant pieces. Serve the sticky rice alongside the mango slices, drizzle any remaining coconut sauce on top, and garnish with toasted sesame seeds or mung beans if desired.

Notes

  • Use glutinous rice labeled specifically as sticky rice for the best texture.
  • Soak the rice thoroughly to soften grains and enable even cooking.
  • Let the rice absorb the coconut milk fully for authentic creaminess.
  • Choose ripe, sweet mangoes for optimal flavor and juiciness.
  • Steam the rice rather than boiling to keep it fluffy and sticky.
  • Store leftover rice and coconut sauce separately to prevent sogginess.
  • Reheat gently with a splash of coconut milk or water to restore moisture.
  • Freezing the cooked dessert is not recommended as it changes texture.
