Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80/20 lean-to-fat)
  • 1 cup shredded or fresh mozzarella cheese
  • 1/2 cup bread crumbs (or gluten-free bread crumbs/almond flour for gluten-free)
  • 1 large egg, beaten
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup or tomato sauce

Instructions

  1. Prepare the Meat Mixture: Start by combining ground beef, bread crumbs, beaten egg, finely chopped onion, garlic, Italian seasoning, salt, and pepper in a large bowl. Mix everything gently until just combined, being careful not to overwork the meat to keep it tender.
  2. Shape the Bottom Layer: On a baking sheet or in a loaf pan, flatten half of the meat mixture into a rectangular shape roughly 9×5 inches, creating a base layer about one inch thick.
  3. Add the Mozzarella Filling: Starting in the middle of the meat base, layer an even spread of mozzarella cheese, ensuring it doesn’t extend to the edges to prevent leaking during baking.
  4. Seal with Remaining Meat Mixture: Carefully cover the cheese layer with the remaining meat mixture, gently pressing the edges together to fully enclose the mozzarella and shape it into a loaf.
  5. Add Topping and Bake: Spread ketchup or tomato sauce on top of the loaf for that delicious glaze, then bake in a preheated oven at 375°F (190°C) for about 50-60 minutes until the meatloaf is cooked through and the top is slightly caramelized.
  6. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute and ensure clean slices that reveal the melted cheese surprise inside.

Notes

  • Use cold mozzarella: Chilling the cheese before stuffing helps prevent it from melting too quickly and leaking out during baking.
  • Don’t overmix: Overworking the meat can lead to dense, tough meatloaf; mix just until combined for tender results.
  • Seal the edges well: Pinch the edges of the meatloaf tightly to fully enclose the mozzarella and prevent any oozing.
  • Let it rest: Resting before slicing keeps the meatloaf juicy and the cheese center intact.
  • Check internal temperature: Aim for 160°F (71°C) for fully cooked ground beef to ensure safety without drying out.
