Ingredients

Scale

Vegetables & Aromatics

  • 2 medium sweet potatoes, peeled and diced into bite-sized chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 12 bell peppers, diced (color of your choice)

Spices & Seasonings

  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • Salt, to taste
  • Black pepper, to taste

Liquids & Others

  • 2 cups vegetable or chicken broth
  • 1 (14 oz) can diced tomatoes (or 2 cups fresh diced tomatoes)
  • 1 can (15 oz) beans (black, kidney, or pinto), rinsed and drained
  • 2 tablespoons olive oil

Instructions

  1. Prepare Your Ingredients: Peel and dice the sweet potatoes into bite-sized chunks. Chop the onion, mince the garlic, and dice the bell peppers. Having all ingredients prepped beforehand helps the cooking process run smoothly.
  2. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, cooking for about 3-5 minutes until soft and fragrant. This creates the flavor base for your chili.
  3. Add Spices and Vegetables: Stir in chili powder, cumin, salt, and pepper. Then add the diced bell peppers and sweet potatoes, allowing the spices to toast with the vegetables for 1-2 minutes to enhance their aroma.
  4. Add Liquids and Beans: Pour in the broth and canned tomatoes, then add the rinsed beans. Bring the mixture to a boil before reducing the heat to low to simmer gently, allowing flavors to meld and sweet potatoes to soften.
  5. Simmer and Adjust Seasonings: Let the chili simmer uncovered or partially covered for 25-30 minutes, stirring occasionally. Taste and adjust salt, pepper, and chili powder to your liking.
  6. Serve and Enjoy: Once the sweet potatoes are tender and the chili has thickened, ladle into bowls and serve with your favorite toppings such as cilantro, avocado, cheese, or sour cream.

Notes

  • Cut sweet potatoes into uniform pieces to ensure they cook evenly.
  • Toast spices in oil before adding liquids to boost their flavor.
  • Add pre-cooked or canned beans near the end of cooking to avoid mushiness.
  • Simmer the chili gently for richer flavors and tender vegetables.
  • Balance the sweet and savory by tasting and adjusting seasonings; a splash of lime juice can brighten the flavors.
