Ingredients

Scale

Pastry

  • 1 sheet thawed puff pastry

Filling

  • 8 oz fresh button or cremini mushrooms, cleaned and thinly sliced
  • 2 shallots or small onions, finely chopped
  • 1 tablespoon olive oil or butter
  • 1 teaspoon fresh thyme leaves
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup grated Gruyère or Parmesan cheese

Instructions

  1. Prepare the Mushrooms: Clean and slice the mushrooms thinly, then sauté them over medium heat with olive oil or butter until golden and fragrant. Add finely chopped shallots and cook until softened, stirring occasionally for even caramelization.
  2. Season the Filling: Add fresh thyme, salt, and pepper to the mushroom mixture, stirring to combine the earthy flavors. Remove from heat and set aside to cool slightly.
  3. Prepare the Pastry Base: Roll out the puff pastry sheet on a lightly floured surface to about 1/8 inch thickness, ensuring it’s thin and even. Transfer the dough to a parchment-lined baking sheet and gently score a 1-inch border around the edges without cutting all the way through.
  4. Assemble the Tart: Spread the mushroom mixture evenly within the scored border of the pastry, leaving the edges free for puffing. Sprinkle grated Gruyère or Parmesan cheese evenly on top.
  5. Bake to Perfection: Place the tart in a preheated oven at 400°F (200°C) and bake for 20 to 25 minutes until the pastry is golden brown and crisp, and the cheese is bubbly and lightly browned.
  6. Cool and Serve: Allow the tart to rest for a few minutes after baking to set, then slice into pieces and enjoy warm or at room temperature.

Notes

  • Pat mushrooms dry before sautéing to avoid soggy pastry from excess moisture.
  • Keep the mushroom layer thin to allow the crust to crisp properly and prevent sogginess.
  • Use chilled puff pastry for maximum flakiness after baking.
  • Score the pastry edges carefully, avoiding cutting all the way through to create a puffed rim.
  • Monitor baking time closely as oven temperatures vary to achieve perfect golden color without burning.
