Ingredients

Scale

Protein

  • 3 cups shredded cooked chicken (rotisserie, poached, or leftover roasted)

Tortillas

  • 810 corn or flour tortillas

Sauces and Dairy

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup green enchilada sauce

Cheese

  • 2 cups shredded Monterey Jack or mozzarella cheese

Vegetables and Aromatics

  • 4 oz diced green chilies (mild heat)
  • 1 teaspoon garlic powder
  • 1/2 cup finely diced onion (optional)
  • 12 cloves garlic, minced (optional)
  • Fresh cilantro, for garnish

Instructions

  1. Prepare the Chicken: Start with cooked, shredded chicken — rotisserie, poached, or leftover roasted. Shred it finely so it layers evenly and absorbs the sauce well. Set aside.
  2. Make the Creamy Sauce: In a large mixing bowl, combine softened cream cheese, sour cream, and diced green chilies. Stir until smooth. Add green enchilada sauce, garlic powder, and a pinch of salt, mixing thoroughly to create a rich, creamy sauce that will coat the casserole layers.
  3. Layer the Casserole: Spread a thin layer of the creamy sauce on the bottom of a casserole dish. Place a layer of tortillas over the sauce. Add a layer of shredded chicken, then spread more sauce over the chicken, and sprinkle with shredded cheese. Repeat these layers until ingredients are used up, finishing with a generous layer of shredded cheese on top for a golden crust.
  4. Bake Until Bubbly: Preheat the oven to 350°F (175°C). Bake the casserole for 25-30 minutes, or until the cheese is melted, bubbly, and lightly golden. Remove from the oven and let it rest for 10 minutes to set before slicing and serving.

Notes

  • Use warm tortillas to prevent cracking and to keep the casserole moist.
  • Do not overload the layers to ensure even cooking and balanced flavors.
  • Let the casserole rest 10 minutes after baking for easier slicing.
  • Choose freshly shredded cheese for better melting and less grease.
  • Adjust heat by modifying amount of green chilies or adding jalapeños according to taste.
