Instructions

  1. Prepare the Lobster Meat: Boil or steam fresh lobster for 8 to 10 minutes until just cooked. Let it cool slightly before removing the meat from claws and tail. Roughly chop into bite-sized pieces to maintain a chunky texture.
  2. Mix the Zesty Dressing: In a bowl, whisk together mayonnaise, lemon juice, lemon zest, Dijon mustard, and hot sauce or cayenne pepper if using. Stir in finely chopped fresh herbs like chives and tarragon. Season with salt and pepper to taste.
  3. Combine Lobster and Vegetables: Gently fold the chopped lobster meat into the dressing. Add finely chopped celery for crunch. If using optional add-ins like avocado or pickled jalapeños, fold them in carefully.
  4. Toast the Buns: Heat a skillet over medium heat and melt butter. Lightly butter the outside of each split-top bun and toast until golden brown and crisp on both sides, creating a buttery, crunchy exterior.
