Broccoli Caesar Pasta Salad

Broccoli Caesar Pasta Salad is a fresh, flavorful, and quick-to-make dish combining crisp broccoli florets, tender pasta, and a classic tangy Caesar dressing. Perfect as a hearty meal or side, it offers a nutritious, satisfying, and vibrant twist on traditional Caesar flavors that works great for meal prep, lunches, or quick dinners.

Ingredients

Pasta & Vegetables

  • Pasta (rotini, penne, or fusilli) – 8 ounces
  • Broccoli florets, fresh or lightly steamed – 3 cups

Dressing & Flavorings

  • Caesar dressing – ¾ cup
  • Freshly grated Parmesan cheese – ½ cup
  • Lemon juice – 1 tablespoon (freshly squeezed)
  • Salt and pepper – to taste

Toppings

  • Croutons – 1 cup

Optional Add-ins

  • Cherry tomatoes – ½ cup, halved (optional)
  • Grilled chicken – 1 cup, sliced (optional)
  • Bacon – ½ cup, cooked and crumbled (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, then add the pasta. Cook according to the package instructions until al dente. Drain and rinse under cold water to stop cooking and cool the pasta for the salad.
  2. Prepare the Broccoli: While the pasta cooks, wash and cut fresh broccoli into small florets. You can use them raw for maximum crunch or steam lightly for a softer texture—just be sure not to overcook so they stay bright green and flavorful.
  3. Mix the Dressing and Pasta: In a large bowl, combine the cooled pasta with Caesar dressing, tossing gently to coat each piece evenly with the creamy, tangy dressing.
  4. Add Broccoli and Extras: Add the broccoli florets, freshly grated Parmesan cheese, and croutons to the bowl. Toss again gently to combine without breaking the ingredients. Add optional ingredients here if desired.
  5. Season and Serve: Squeeze fresh lemon juice over the salad and season with salt and pepper to taste. Give it one last toss, then serve immediately or chill for later.

Notes

  • Use cold water to rinse pasta and broccoli to stop cooking and keep textures crisp.
  • Choose a quality Caesar dressing; homemade is best if you have time.
  • Add dressing in stages to avoid sogginess.
  • Keep croutons separate and add just before serving to maintain crunchiness.
  • Allow the salad to rest in the fridge for 30 minutes to let flavors meld.
  • For vegan options, substitute Parmesan with vegan cheese and use dairy-free Caesar dressing.
