Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breast or thighs, sliced into thin strips

Vegetables

  • 1 each red, green, and yellow bell peppers, sliced into thin strips
  • 1 medium onion, thinly sliced

Seasonings & Oils

  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning (blend of chili powder, cumin, paprika, garlic powder, and cayenne pepper)
  • 2 tbsp fresh lime juice

Carbohydrates

  • 8 soft flour or corn tortillas, warmed

Optional Toppings

  • Sour cream, salsa, guacamole, shredded cheese (cotija or Monterey Jack), chopped cilantro, sliced avocado

Instructions

  1. Prep Your Ingredients: Start by slicing your chicken into thin strips to ensure quick and even cooking. Slice bell peppers and onions into thin, uniform strips for that classic fajita texture and appearance.
  2. Season the Chicken: Place the chicken strips in a bowl and toss with olive oil and the fajita seasoning blend, making sure every piece is evenly coated for maximum flavor.
  3. Cook the Chicken: Heat a large skillet over medium-high heat. Cook the chicken for 5 to 7 minutes until browned on all sides and cooked through. Remove from the skillet and set aside to keep warm.
  4. Sauté the Vegetables: In the same skillet, add a bit more olive oil if needed. Toss in the sliced onions and bell peppers. Cook until softened but still slightly crisp, about 5 minutes, stirring frequently to prevent burning.
  5. Combine and Add Lime: Return the cooked chicken to the skillet with the vegetables. Stir together and heat through. Finish by squeezing fresh lime juice over the mixture for a bright, tangy flavor.
  6. Warm the Tortillas: Quickly warm tortillas in a dry skillet or microwave until soft and pliable, ready for wrapping the fajita filling.

Notes

  • Use high heat for cooking to achieve a nice sear and caramelization without stewing the ingredients.
  • Don’t overcrowd the pan; cook in batches if necessary to ensure good texture.
  • Marinate chicken for at least 15 minutes to infuse more flavor.
  • Slice vegetables uniformly for even cooking and appealing presentation.
  • Let cooked chicken rest a few minutes off the heat to retain juiciness.
