Ingredients

Scale

Wet Ingredients

  • 1 cup Guinness Stout
  • 12 tbsp unsalted Butter
  • 2 large Eggs
  • 1 cup Sour Cream
  • 1 tbsp Vanilla Extract

Dry Ingredients

  • 1 3/4 cups All-Purpose Flour (or gluten-free flour blend)
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 1/2 cups Granulated Sugar
  • 1/4 cup Brown Sugar
  • 1/2 tsp Salt

Frosting

  • 8 oz Cream Cheese, softened
  • 3 cups Powdered Sugar
  • 1 tsp Vanilla Extract

Instructions

  1. Prepare the Guinness Mixture: Heat 1 cup of Guinness stout with 12 tablespoons of butter and 3/4 cup unsweetened cocoa powder in a saucepan over medium heat until the butter melts and the mixture is smooth and aromatic. Set aside to cool slightly.
  2. Mix Dry Ingredients Separately: In a large bowl, whisk together 1 3/4 cups all-purpose flour (or gluten-free flour blend), 1 1/2 teaspoons baking soda, 1 teaspoon baking powder, 1/4 cup brown sugar, and 1/2 teaspoon salt. Sift if needed to ensure no lumps.
  3. Combine Wet Ingredients: In another bowl, beat 2 large eggs with 1 1/2 cups granulated sugar, 1 cup sour cream, and 1 tablespoon vanilla extract until smooth and slightly fluffy.
  4. Bring It All Together: Gradually add the warm Guinness-cocoa mixture to the wet ingredients, stirring gently to combine. Then fold in the dry ingredients carefully to keep some air in the batter, ensuring a light and tender texture.
  5. Bake to Perfection: Pour the batter into a greased or parchment-lined 9-inch round cake pan. Bake at 350°F (175°C) for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before frosting.
  6. Prepare the Frosting: Whip 8 ounces of softened cream cheese with 3 cups powdered sugar and 1 teaspoon vanilla extract until smooth and creamy. Frost the cooled cake generously.

Notes

  • Use room temperature ingredients for a smooth batter and even baking.
  • Sift cocoa powder and flour together to prevent lumps and achieve a silky texture.
  • Measure flour by spooning into the cup and leveling off, instead of scooping, to avoid a dense cake.
  • Cool the cake completely before frosting to prevent melting and sliding.
  • Store the cake covered to maintain moisture and freshness.
