Creamy Miso Mushroom Pasta

Creamy Miso Mushroom Pasta

Creamy Miso Mushroom Pasta is a comforting, flavorful dish that combines earthy mushrooms with the rich umami taste of miso in a luscious, velvety sauce. Easy to prepare in under 30 minutes, it caters to vegetarian, vegan (with swaps), and gluten-free diets, making it perfect for cozy weeknight dinners or sharing with friends.

Ingredients

Scale

Pasta:

  • 8 oz fettuccine, linguine, or preferred long pasta (use gluten-free pasta if desired)

Mushrooms:

  • 2 cups mixed mushrooms (cremini, shiitake, oyster), cleaned and sliced

Sauce Base:

  • 2 tablespoons olive oil or butter
  • 2 cloves garlic, finely chopped
  • 1 small onion, finely chopped
  • 2 tablespoons white or yellow miso paste
  • 1 cup heavy cream, coconut milk, or cashew cream (for vegan option)
  • ½ cup vegetable broth

Seasonings and Garnish:

  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley or thyme, chopped

Instructions

  1. Prepare the Mushrooms: Clean and slice the mushrooms evenly. Heat olive oil or butter in a large skillet over medium heat. Add the mushrooms and sauté until they release their juices and turn golden brown, concentrating their flavor and forming the sauce base.
  2. Sauté Aromatics: Add finely chopped garlic and onion to the skillet with mushrooms. Cook until fragrant and translucent, stirring occasionally to avoid burning, infusing the sauce with savory depth.
  3. Make the Sauce: Stir in the miso paste, mixing well to melt it into the mushrooms and aromatics. Pour in the cream substitute and vegetable broth, then simmer gently while stirring often until the sauce thickens into a creamy consistency that clings to pasta.
  4. Cook the Pasta: While the sauce simmers, cook the pasta in salted boiling water according to package directions until al dente. Reserve about ¼ cup of pasta water before draining to adjust sauce texture if needed.
  5. Combine and Finish: Toss the drained pasta into the skillet with the creamy miso mushroom sauce. Add reserved pasta water as needed to loosen the sauce. Stir in fresh herbs, season with salt and pepper to taste, and serve immediately with optional additional garnish.

Notes

  • Use high-quality miso paste for better flavor depth.
  • Cook mushrooms in batches if needed to avoid overcrowding and ensure caramelization.
  • Reserve pasta water to adjust sauce consistency and help it bind to pasta.
  • Add fresh herbs just before serving to preserve their bright flavor and color.
  • Adjust cream substitute gradually to avoid an overly heavy sauce.
