Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil (for brushing and grilling)
  • Salt, to taste
  • Pepper, to taste
  • Optional: lemon zest or garlic powder for extra flavor

Green Goddess Sauce

  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh tarragon, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 clove garlic
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1/2 cup Greek yogurt or mayonnaise
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the Green Goddess Sauce: Combine fresh parsley, tarragon, chives, garlic, lemon juice, Greek yogurt or mayonnaise, and olive oil in a food processor or blender. Pulse until smooth and creamy, then season with salt and pepper to taste. Set aside to let the flavors meld.
  2. Marinate the Chicken: Brush the chicken breasts with olive oil and season generously with salt and pepper. Optionally, add lemon zest or garlic powder for additional flavor. Let the chicken rest at room temperature for at least 10 minutes.
  3. Preheat the Grill: Heat the grill to medium-high and clean the grates. Lightly oil the grates to prevent sticking and to achieve perfect grill marks.
  4. Grill the Chicken: Place the chicken on the grill and cook for 5-6 minutes per side, flipping once halfway through. Grill until the internal temperature reaches 165°F (74°C) and the chicken has beautiful grill marks.
  5. Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes to redistribute juices. Slice if desired and serve with a generous dollop or drizzle of the Green Goddess sauce on top or on the side.

Notes

  • Let chicken come to room temperature before grilling for even cooking.
  • Use a meat thermometer to ensure chicken reaches 165°F for safety.
  • Fresh herbs deliver a vibrant flavor; avoid dried if possible.
  • Adjust sauce texture by blending longer for smooth or pulsing less for chunkier consistency.
  • Rest the grilled chicken to keep it juicy and tender.
