Shrimp and Mango

  • 2 ripe mangoes, peeled and cut into chunks

  • 1/2 tsp chili flakes (adjust to taste)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the marinade: In a small bowl, mix olive oil, minced garlic, lime juice, chili flakes, salt, and black pepper. This marinade will infuse the shrimp with flavor and keep them juicy on the grill.
  2. Marinate the shrimp: Toss the peeled and deveined shrimp in the marinade and let them sit for 15-20 minutes to ensure every bite is perfectly seasoned and tender.
  3. Cut the mango: While the shrimp marinates, peel the mangoes and cut them into evenly sized chunks, roughly the same size as the shrimp for balanced cooking.
  4. Assemble the skewers: Thread shrimp and mango pieces alternately onto the skewers, which not only looks beautiful but also helps flavors meld during grilling.
  5. Grill: Place the skewers on a preheated grill over medium-high heat. Cook for about 2-3 minutes per side until shrimp turn pink and firm, with light grill marks on the mango.
  6. Garnish and serve: Sprinkle chopped fresh cilantro over the skewers and squeeze a bit of lime juice right before serving for a bright finish.
