Ingredients

Scale

Shrimp and Marinade

  • 1 lb fresh peeled and deveined shrimp
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons capers, drained
  • 2 garlic cloves, minced
  • 3 tablespoons extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste

For Garnish and Serving

  • 2 tablespoons fresh parsley, chopped
  • Wooden or metal skewers (if wooden, soaked in water for 20 minutes before use)

Instructions

  1. Prepare the Marinade: In a bowl, combine freshly squeezed lemon juice, minced garlic, olive oil, capers, salt, and pepper. Stir everything well to meld the flavors together beautifully.
  2. Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade. Mix gently to ensure each shrimp is evenly coated. Let it sit for about 15 minutes to absorb the piccata flavors.
  3. Skewer the Shrimp: Thread shrimp evenly onto the skewers. If using wooden skewers, ensure they were soaked beforehand to prevent burning during grilling.
  4. Preheat the Grill: Heat your grill to medium-high heat, making sure it is hot enough to sear the shrimp and create grill marks without sticking.
  5. Grill the Skewers: Place skewers on the grill and cook for approximately 2-3 minutes per side, or until shrimp are pink, opaque, and have slight grill marks.
  6. Add Fresh Parsley and Serve: Remove skewers from the grill. Sprinkle generously with chopped fresh parsley and serve immediately for the best flavor.

Notes

  • Do not over-marinate shrimp; 15-20 minutes is sufficient to avoid mushy texture.
  • Preheat your grill thoroughly to prevent sticking and achieve perfect grill marks.
  • Use shrimp of similar size to ensure even cooking.
  • Keep an eye on cooking time as shrimp cook quickly; remove promptly to preserve juiciness.
  • Soak wooden skewers in water for at least 20 minutes before grilling to prevent burning.
