Shrimp and Pasta
- 1 lb large shrimp, fresh or thawed
- 8 oz fettuccine or linguine pasta
Sauce
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/3 cup chopped sun-dried tomatoes (not in oil)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt and freshly ground black pepper, to taste

- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta al dente according to package instructions. Reserve about 1/2 cup of the pasta water before draining the pasta.
- Sauté the Shrimp: Heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add to the skillet. Cook shrimp for 1-2 minutes per side until pink and opaque. Remove from skillet and set aside.
- Prepare the Sauce: Reduce heat to medium. Add minced garlic to the skillet and sauté until fragrant, about 30 seconds. Stir in chopped sun-dried tomatoes, heavy cream, red pepper flakes, and freshly grated Parmesan cheese. Stir constantly until the sauce thickens to your desired consistency.
- Combine Pasta and Shrimp: Return cooked shrimp to the skillet. Add the drained pasta and toss everything together. Add reserved pasta water gradually if needed to loosen the sauce and achieve a silky texture. Stir until everything is evenly coated and heated through.
- Garnish and Serve: Remove from heat and sprinkle with fresh chopped basil or parsley. Optionally, add extra Parmesan cheese. Serve immediately while hot for the best taste.
