Shrimp and Pasta

  • 1 lb large shrimp, fresh or thawed
  • 8 oz fettuccine or linguine pasta

Sauce

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (not in oil)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Salt and freshly ground black pepper, to taste

Garnish

  • Fresh basil or parsley, chopped, for garnish
  • Extra Parmesan cheese (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta al dente according to package instructions. Reserve about 1/2 cup of the pasta water before draining the pasta.
  2. Sauté the Shrimp: Heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add to the skillet. Cook shrimp for 1-2 minutes per side until pink and opaque. Remove from skillet and set aside.
  3. Prepare the Sauce: Reduce heat to medium. Add minced garlic to the skillet and sauté until fragrant, about 30 seconds. Stir in chopped sun-dried tomatoes, heavy cream, red pepper flakes, and freshly grated Parmesan cheese. Stir constantly until the sauce thickens to your desired consistency.
  4. Combine Pasta and Shrimp: Return cooked shrimp to the skillet. Add the drained pasta and toss everything together. Add reserved pasta water gradually if needed to loosen the sauce and achieve a silky texture. Stir until everything is evenly coated and heated through.
  5. Garnish and Serve: Remove from heat and sprinkle with fresh chopped basil or parsley. Optionally, add extra Parmesan cheese. Serve immediately while hot for the best taste.

Notes

  • Do not overcook the shrimp to avoid a rubbery texture. Remove once pink and opaque.
  • Reserve pasta water to thin and loosen the sauce while keeping it silky and clingy.
  • Use fresh garlic and herbs for optimal flavor enhancement.
  • Grate Parmesan cheese fresh for better melting and richer taste.
  • If the sauce is too thick, add more cream or pasta water slowly to adjust consistency.
