Ingredients

Scale

Chicken

  • 1 lb boneless chicken thighs or breasts

Teriyaki Sauce

  • 1/4 cup soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons brown sugar or honey
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon rice vinegar or mirin

Optional Thickener

  • 1 teaspoon cornstarch (optional)
  • 1 tablespoon water (for cornstarch slurry)

Garnishes

  • 1 tablespoon toasted sesame seeds
  • 2 green onions, finely chopped

Additional

  • 1 tablespoon cooking oil (vegetable or sesame oil recommended)

Instructions

  1. Prepare the Sauce: Combine soy sauce, brown sugar or honey, minced garlic, grated ginger, and rice vinegar in a bowl. Stir until the sugar dissolves completely. Set aside to allow the flavors to meld.
  2. Cook the Chicken: Heat oil in a skillet over medium-high heat. Add the boneless chicken thighs or breasts and cook for about 5 to 6 minutes per side, until browned and nearly cooked through.
  3. Add the Sauce and Simmer: Pour the prepared teriyaki sauce over the chicken in the pan. Reduce heat to medium-low and simmer, spooning the sauce over the chicken until it thickens slightly and the chicken is fully cooked—about 5 minutes.
  4. Thicken the Sauce (Optional): If you prefer a thicker glaze, mix cornstarch with water to make a slurry, then stir it into the sauce. Cook for an additional minute until the sauce becomes glossy and rich.
  5. Garnish and Serve: Sprinkle toasted sesame seeds and chopped green onions over the chicken before serving to add freshness, crunch, and color.

Notes

  • Use chicken thighs for juicier, more tender meat that absorbs the sauce better.
  • Marinate chicken for at least 15 minutes before cooking to enhance flavor.
  • Adjust sauce thickness with cornstarch slurry gradually to avoid lumps.
  • Let chicken rest a few minutes off heat after cooking to lock in juiciness.
  • Fresh garnishes brighten the dish visually and taste-wise.
